I don't know the rest of your story and would love to know more details, eg other symptoms and meds you're on..maybe you already posted somewhere I'll look for it

The symptoms you are mentioning especially itchy ears could be allergy or mast cell. Have you been checked for ear or throat infections? Do you notice any triggers.

With your low iron as far as mast cell stuff you could have malabsorption if you iron levels are also low, I would get them checked.

Are you bleeding anywhere you know of or having heavy periods?

Elevated ESR is a totally nonspecific and essentially just means there's some sort of infectious or inflammatory process somewhere in the body but is not useful enough in isolation
