Socca! It's gluten free!

Oh yeah! I just made some socca. I was watching some traveling show a while back and saw them eating socca and I thought that looks easy to make. So I just made some and it's so yummy.
Really simple.....
1 cup plus 1 tbl of chickpea flour
1 teaspoon sea salt
2 teaspoons olive oil
1 1/2 cups of water

Pour 2 teaspoons oil in a skillet and warm over meduim heat. Mix flour, water, and salt in a bowl and pour batter into skillet once oil has warmed up. Cook on meduim heat 5 to 7 minutes on each side till done. Depending on your pan it might take longer or shorter.

Now I cooked this on a 10'' iron skillet and it took a lot longer. So I recommend a bigger skillet or you could cook it in the oven. I'm not quite sure how to cook it in the oven, so you can google it, if you want to do it that way.
So next time I will do a bigger skillet make the batter stretch out more making it able to cook faster since it's not so thick.
I also added some herbs, thyme, garlic, onion powder and dill. It was yummers!
