So some if my main triggers are dairy, soy, eggs and gluten.
Sometimes I crave a grilled cheese sandwich or cheese quesadilla.
My prayers are answered, I found some dairy free, soy free cheese. If you are DF/SF/GF you know this is a huge challenge to find a cheese substitute without it containing soy or nuts. I bought this stuff the other day and it does melt like real cheese and it taste pretty dang close. I bought the cheddar and it tastes like sharp cheddar.
The cheese is called Daiya. Here is the link so you can see if a store close to you carries it. It is kind of spendy but if you need to have you cheese fix every once in a while it's not that bad.

Daiya is the BEST!!!!! I've been using this cheese to make special pizza, and it really does seem like a treat!! I've been using it for a year, and it's incredible to be able to make dishes involving cheese again!
